Paiche: an endangered species, King of the Amazon

 

 

The mystic King of the Amazon

The Paiche is an impressive fish that has been venerated over the centuries by inhabitants of the Amazonian basin. It can grow up to 450 Lbs in weight. The cult to Paiche is owed to its delicious white meat of firm texture with a subtle elegant flavor. As a regional favorite, it has been overfished and its population in the wild has been decimated severely. It became protected by international law two decades ago.

 

A scientific breakthrough to bring the species back to life
The Amazone project started five years ago, as a corporate social responsibility initiative by one of the largest business groups in Peru. After investing millions of dollars in research, the Amazone team accomplished their elusive goal: to reproduce Paiche in captivity with consistent results, naturally. Today, Amazone is the only company that farms Paiche, and the only one with an exportable offering.

 

A delicious, white meat, thick fillet with a mild elegant flavor
Paiche's characteristics allow for most versatile culinary use. The meat is firm, juicy, and it forms a film crust in the outside when seared or baked (due to high collagen levels)
. Fillets are thick allowing for various cuts and servings, and it can softy flake.
